PROCESS
Fermentation & Sun-drying
The fermentation and sun drying process of our cacao is critical for the delivery of an extremely pure and healthy final product, and is a process most companies do not do. We ferment our cacao beans for 2-3 days and then let them sun-dry in an extremely clean, non-contaminated environment to make sure no fungal or mold overgrowth happens.
When the fermentation and sun-drying processes are not done correctly, you will get an inferior cacao product that can potentially damage your long-term health due to the presence of fungus and mold (mycotoxins) in the cacao. These mycotoxins are tasteless and odorless but can wreak havoc internally, specifically to the health of the gut.
